Chick Pea Salad Lettuce Wraps

Some days you just want chicken. Or salad. Or chicken salad. There is something about that burst of grape, the bite of celery, and mixing it all together.

These Chick Pea salad lettuce wraps have satisfied this craving for me on more than one occasion. You can make the chick pea salad, keep it in the fridge and then throw these together quickly whenever the needs strikes.

Chick Pea Salad Lettuce Wraps Recipe

Gather:

  • One can of chick peas, drained
  • 1 teaspoon lemon juice
  • 1/2 teaspoon of Mrs. Dash salt substitute
  • 1/2 teaspoon of ground pepper (other seasonings as desired)
  • 3 tablespoons of chopped celery (very fine)
  • Grapes cut into halves
  • Bibb lettuce or any kind to use as your wrap
  • (Can also add apples, walnuts, etc to make this your own)

Create:

The bit of lemon provides the moisture for this salad, but you can also not drain the chick peas completely. I pour out the chick peas on a cutting board and give them a coarse chop. Don’t mash them, just split them up a bit.

Then add all of the lemon, seasonings, celery, and apples, walnuts, etc. if you want those. Place a few spoonfuls of mixture on each lettuce leaf and top with grapes. These can be folded up like little spring rolls or just folded in half. Fresh, flavorful, and the hit the spot for me every time. Enjoy! ~ Amanda Rae
